People can be divided into two groups when it comes to matzo ball soup: those that like their matzo balls light and spongy, and those that like their matzo balls dense and cannonball-like. I fall into the latter category. I like them very firm.
If you get the Manischewitz Matzo Ball mix, they taste good, but they make the light and fluffy kind.
