I got a pound of slab apricots at Trader Joe's today, and are they ever good!

Slab apricots are dried apricots that are not harvested until they are fully ripe. This changes two things from normal dehydrated apricots you normally see:

1. Much sweeter and better tasting.
2. Because they are soft and ripe during processing they don't hold their shape well, so they don't have a uniform "pretty" shape.

In the past the slab apricots were the ones left behind at the orchard for the farmer's family and neighbors, but word has gotten out that these are the ones you want. If you see a bag at the store try it. I paid $4.79 for a one pound bag.
